Sous Chef - In-Room Dining

About the role

Crown Perth is seeking an experienced Sous Chef to lead its high-volume In-Room Dining kitchen, which serves hotel guests around the clock. Working closely with the Chef de Cuisine, the Sous Chef plays a key leadership role in the day-to-day operation of the kitchen, ensuring quality, consistency, speed and excellent service.

Key responsibilities

• Support the leadership and day-to-day operation of a busy In-Room Dining kitchen
• Lead, mentor and develop a team of chefs and cooks across multiple shifts
• Ensure all dishes are prepared and presented to Crown's five-star standards
• Manage service periods while maintaining quality, efficiency and guest satisfaction
• Assist with rostering, labour management, stock control and operational planning
• Drive a culture of safety, compliance, teamwork and exceptional customer service

Required profile

• Trade-qualified chef with relevant culinary qualifications (minimum Certificate III and IV in Commercial Cookery)
• Previous leadership experience as a Sous Chef in a hotel, resort or large hospitality environment
• Experience in high-volume kitchens with multiple service periods
• Strong people leadership and coaching skills
• Ability to stay calm under pressure and make confident operational decisions
