Junior Sommelier / Sommelier – Luxury Hotel

About the role

We are seeking a passionate Junior Sommelier (or Sommelier) to join the Capella Sydney team. You will be responsible for curating memorable dining experiences through expert wine service, advising guests on selections and food‑wine pairings, and maintaining a comprehensive beverage program that reflects our brand standards.

Key responsibilities

• Provide wine recommendations and food‑wine pairing suggestions to enhance guest dining experiences.
• Manage and update the wine and beverage list, sourcing products within brand commitments and budget.
• Deliver internal and external wine training sessions for colleagues.
• Coordinate with other departments to ensure smooth service operations.
• Maintain appropriate drink ratios and propose service improvements.
• Serve wines, mineral water, brandies and other beverages according to high service standards.
• Secure and organise liquor, wine, beer, and storage areas.
• Handle guest complaints, record feedback, and resolve issues promptly.
• Uphold LQA and Forbes audit standards and ensure inventory accuracy.

Required profile

• Enthusiastic and dedicated to delivering high‑quality guest experiences.
• Strong knowledge of wine varieties, regions and food‑wine pairing principles.
• Ability to anticipate personalized service needs and guide guests confidently.
• Experience in training or mentoring team members on beverage service.
• Commitment to maintaining standards and handling service issues professionally.
