Casual Commis Chef

About the role

A casual Commis Chef is sought to join the Culinary Team at Novotel & ibis Sydney Darling Harbour, in the heart of Darling Harbour. Working alongside experienced chefs, the role contributes to dining experiences across restaurants, room service, buffet operations and conference and events facilities. Flexible shifts, ongoing training and career development are offered.

Key responsibilities

• Assist with the preparation, cooking and presentation of high-quality dishes across kitchen operations
• Maintain consistent food quality, presentation and portion standards according to established recipes
• Prepare mise en place and keep the kitchen clean, organised and hygienic, following food safety and WHS standards
• Support stock rotation, inventory management and waste minimisation
• Work with the Culinary and Food & Beverage teams and assist senior chefs during busy periods

Required profile

• Certificate III in Commercial Cookery or equivalent
• Previous experience as a Chef de Partie or similar in a hotel, restaurant or high-volume kitchen
• Knowledge of food safety, hygiene and HACCP principles
• Ability to supervise, coach and support junior kitchen staff
• Flexible to work a rotating roster including weekends, public holidays and evenings

• Menu preparation, food presentation and seasonal ingredients
• Stock control, stock rotation and minimising food wastage
• Organisational, communication and time management skills
• Ability to work under pressure and manage a kitchen section efficiently
