Bar Manager - Mott 32

About the role

Crown Resorts is hiring a Bar Manager for the Australian debut of Mott 32, a luxury dining brand. Reporting directly to the General Manager, you will lead the beverage program and bar operations from pre-opening through to ongoing operations, shaping an innovative and commercially successful beverage offering that complements the venue's dining experience.

Key responsibilities

• Lead the pre-opening, launch and ongoing operation of the Mott 32 bar program.
• Develop and deliver an innovative cocktail, spirits and non-alcoholic beverage offering aligned to the brand.
• Drive beverage quality, consistency and presentation standards across all service periods.
• Manage beverage purchasing, inventory control, stocktakes and supplier relationships to optimise profitability and minimise wastage.
• Stay ahead of industry trends and evolving guest preferences.
• Recruit, train, coach and develop a team of bartenders and beverage professionals.
• Collaborate with the General Manager and Executive Chef on seamless food and beverage experiences.
• Maintain compliance with liquor licensing, food safety and responsible service requirements.

Required profile

• Proven success in a Bar Manager, Beverage Manager or similar leadership role.
• Experience in luxury restaurants, fine dining venues, premium hotels or internationally recognised hospitality brands.
• Strong knowledge of cocktails, spirits, wine and contemporary beverage trends.
• Demonstrated experience managing ordering, inventory control, stock management and beverage cost performance.
• Exceptional leadership and team development skills.
• Strong commercial awareness and stakeholder management skills.
• Pre-opening hospitality experience is highly regarded.
