About the role

The Bar Manager will lead daily operations of the Polo Bar at Ardour Milton Park Bowral, ensuring exceptional guest experiences and seamless service across restaurant, events, and hotel functions.

Key responsibilities

  • Curate a premium beverage offering, including signature cocktails, fine wines, and artisanal spirits.
  • Recruit, train, and mentor bar staff to deliver high‑level service and product knowledge.
  • Manage stock control, supplier relationships, and cost optimisation to maximise margins.
  • Ensure compliance with RSA, health and safety regulations, and internal policies.
  • Collaborate with restaurant, events, and hotel teams to integrate guest experiences.

Required profile

  • Proven experience managing a bar or beverage operation in a luxury or high‑end hospitality setting.
  • Strong leadership skills with a focus on team development and service excellence.
  • Excellent communication, interpersonal, and conflict‑resolution abilities.

Required skills

  • Proficiency with POS systems and bar management software.
  • Inventory control and stock management expertise.
