Assistant Restaurant Manager - Nobu Sydney

About the role

Nobu Sydney, a globally recognised luxury Japanese restaurant, is looking for an Assistant Restaurant Manager to support the Restaurant Manager and lead from the floor. You will help deliver the Nobu experience, drive service excellence, develop talent and support commercial performance. This is a permanent full-time position (40 hours per week); only candidates with unrestricted Australian working rights will be considered.

Key responsibilities

• Lead, coach and develop front-of-house team members to deliver exceptional service
• Drive luxury service standards and create memorable dining experiences
• Support roster management, labour optimisation and operational planning
• Manage guest feedback and resolve service issues professionally
• Assist with financial performance, stock control and cost management
• Ensure compliance with operational procedures, service standards and food safety requirements
• Lead from the floor and support service delivery during peak trading periods
• Act as venue leader in the Restaurant Manager's absence

Required profile

• Proven leadership experience in a premium, luxury or high-volume dining environment
• Passion for hospitality and creating memorable guest experiences
• Coaching and mentoring capability, focused on developing high-performing teams
• Experience managing guest relations, service recovery and VIP experiences
• Hands-on leadership style, able to lead from the floor during peak service

Required skills

• Commercial acumen across labour management, productivity and venue performance
• Food, wine, sake and beverage knowledge
• Japanese or Asian cuisine experience highly regarded
• Current NSW RSA Competency Card
