Assistant Outlets Manager - Restaurants & Events

About the role

The Fairmont Resort & Spa in the Blue Mountains is looking for an experienced, hands-on Assistant Outlets Manager to oversee the daily operations of its restaurants and support its busy Conference & Events program. Reporting to the Outlets Manager, the role covers restaurant service, team leadership and event delivery, working closely with the Head Chef and senior leadership.

Key responsibilities

• Lead and motivate the restaurant team, creating a positive, professional and supportive environment.
• Oversee daily operations so that breakfast, lunch, dinner and events run smoothly, with presentation and brand standards upheld.
• Work with the Head Chef to coordinate menus, service flow and guest feedback.
• Manage rosters and labour costs, balancing operational needs with wage budgets.
• Monitor and order supplies, manage stock levels, minimise wastage and keep accurate reporting.
• Onboard new staff, provide continuous training and coach team members.
• Coordinate C&E events such as weddings and conferences with the functions team.
• Lead by example on the floor so guests receive attentive, efficient and friendly service.
• Maintain compliance with WHS, RSA and food safety standards.

Required profile

• Restaurant or F&B Assistant Manager experience, or a strong supervisor ready for the next step.
• People management skills, with the ability to train, motivate and retain a team.
• Strong organisational and multitasking abilities, managing service operations and events at once.
• Customer-focused, confident communicator who can liaise with staff, chefs and management.
• Flexible availability, including evenings, weekends and event schedules.
