Sous Chef

About the role

Cable Beach Club Resort & Spa is Broome's premier beachfront resort, spanning 26 acres with 225 rooms, two pools, a day spa, hair salon and four restaurants. It is seeking a Sous Chef who balances hands-on preparation of high-quality dishes with operational responsibility for supervising and directing all kitchen personnel.

Key responsibilities

• Organise and facilitate the highest possible standards of food service using the staff and resources available.
• Create and cost menu items within the Executive Chef's guidelines while keeping with current trends.
• Promote specialty dishes based on ingredients and season, and use local produce where available to create innovative menus.
• Encourage clear communication lines and forums between all personnel.
• Train and mentor line staff, including Apprentices and Trainees.

Required profile

• Completed a trade qualification in commercial cookery.
• Previous experience in a fine dining, resort or hotel restaurant.
• Previous supervisory experience, preferably at Sous level.
• Strong interpersonal and communication skills.
• Thorough knowledge of security, health and safety requirements in a commercial kitchen.
