Sous Chef - Banquets

About the role

Sofitel Gold Coast Broadbeach, a five-star luxury hotel in Broadbeach with 296 rooms, two bars, a restaurant, a multi-level pool and ten event spaces, is looking for a Sous Chef - Banquets. You will lead the culinary side of meetings, conferences and events, working closely with the Executive Chef to deliver refined menus and luxury banquet experiences.

Key responsibilities

• Lead and inspire a team of chefs delivering world-class cuisine for bespoke banquets, conferences and events, from intimate meetings to large events.
• Collaborate with the Executive Chef to design menus that showcase local produce with French flair.
• Oversee all aspects of banquet kitchen operations, from preparation and plating to logistics and service timing.
• Maintain the highest standards of food quality, hygiene and HACCP compliance.
• Foster a culture of creativity, teamwork and pride within the kitchen brigade.
• Help enhance the hotel's event offering and culinary reputation.

Required profile

• Recognised culinary qualifications and prior experience as a Sous Chef or Senior Chef de Partie in a luxury hotel or banqueting environment.
• Proven ability to manage large-scale kitchen operations and coordinate high-volume functions without compromising quality.
• Strong knowledge of French and modern Australian cuisine, with attention to presentation and precision.
• Excellent leadership, communication and organisational skills, able to mentor and motivate a diverse team.
• Ability to stay calm and professional during high-volume events.
• Flexibility to work a rotating roster including weekends, evenings and event schedules.
