Sommelier - Nobu Melbourne

About the role

Crown Resorts is hiring a Sommelier for Nobu Melbourne in Southbank, Victoria. The Sommelier plays a key role in delivering an exceptional wine and beverage experience, working with a hospitality team to create memorable dining moments for local and international guests. The role involves curating beverage journeys, driving wine and beverage sales, supporting team development and building a strong beverage culture, in close collaboration with restaurant leadership and Crown's wine team.

Key responsibilities

• Deliver exceptional wine and beverage service and give expert recommendations on wines, sake and premium beverages that match Nobu's cuisine
• Drive beverage sales through guest engagement and service excellence
• Support beverage promotions, initiatives and revenue-driving strategies
• Assist with inventory management, stock control and ordering, and maintain accurate records to support cost control
• Train, coach and mentor team members, and foster a beverage culture across the team
• Ensure compliance with responsible service, licensing and company standards

Required profile

• Demonstrated experience as a Sommelier in a premium hospitality environment
• Strong wine knowledge and a passion for continuous learning
• Proven ability to influence beverage sales and experience training team members
• Experience in luxury hotels, premium restaurants or fine dining is highly regarded
• WSET qualification or equivalent beverage certification is highly regarded
