F&B Duty Manager

About the role

Courtyard By Marriott in Melbourne is looking for an F&B Duty Manager covering restaurants, bars and room service. The role supports daily supervision of restaurant operations, menu planning, sanitation standards and floor support during peak meal periods, while striving to improve guest and employee satisfaction.

Key responsibilities

• Supervise restaurant operations and assist servers and hosts on the floor during peak meal periods
• Help manage the restaurant team: handle employee questions, monitor performance, give feedback and supervise daily shifts, including in the absence of the Restaurant Manager
• Ensure staff have supplies, equipment and uniforms, and that food quality, service levels and alcohol service comply with policy and local laws
• Manage to achieve or exceed budgeted goals and open and close restaurant shifts
• Interact with guests, handle complaints and review comment cards and guest satisfaction results with staff
• Oversee training, coach and counsel employees and communicate performance expectations
• Communicate issues about food quality and service to the Chef and Restaurant Manager

Required profile

• High school diploma or GED, or a 2-year degree in Food Service Management, Hotel and Restaurant Management, Hospitality, Business Administration or a related field
• 4 years of experience in food and beverage, culinary or a related area, or 2 years with a relevant degree
