Commis Chef

About the role

A Commis Chef is needed at a Marriott hotel in Sydney (30 Pitt Street). The role covers preparing meals and dishes to recipe and quality standards, cooking and serving food, and supporting the kitchen team. Full-time, non-management position.

Key responsibilities

• Prepare special meals or substitute items, and prepare cold foods
• Cook food according to recipes, quality standards, presentation standards and the food preparation checklist
• Regulate oven, broiler, grill and roaster temperatures; pull food from freezer storage to thaw in the refrigerator
• Ensure proper portion, arrangement and garnish, and monitor the quality and quantity of food prepared
• Maintain food logs and inform the Chef of excess food for daily specials
• Tell food and beverage staff about menu specials and out-of-stock items
• Anticipate guest service needs and communicate assistance during busy periods
• Assist management with hiring, training, scheduling, evaluating, counselling, disciplining and coaching staff, and act as a role model
• Follow company, safety and security policies, report accidents and unsafe conditions, and complete safety training
• Keep a clean, professional appearance, protect confidential information and company assets, and perform other reasonable duties requested by supervisors

Required profile

• Certificate IV in Commercial Cookery or equivalent
• Warm, welcoming demeanour and personable communication skills
• Passion for the industry and a desire to be the best in service
• Ability to stand, sit or walk for long periods and lift up to 25 pounds
• Full Australian working rights required
