Bar Manager – Luxury Cocktail Bar

About the role

We are seeking an experienced Bar Manager to lead Mary Mary, the award‑winning cocktail bar at The Tasman Luxury Collection Hotel in Hobart. The role blends hands‑on service, team leadership and commercial responsibility to uphold the venue’s reputation for world‑class drinks and luxury hospitality.

Key responsibilities

• Oversee day‑to‑day operations, ensuring seamless service and exceptional guest experiences.
• Inspire, mentor and develop the bar team through coaching, training and performance management.
• Lead the creation, execution and ongoing development of the cocktail program in partnership with Food & Beverage leadership.
• Maintain rigorous standards for beverage preparation, presentation and brand consistency.
• Manage beverage cost, stock control, inventory, ordering, supplier relationships and wastage to meet financial targets.
• Analyse sales performance and implement initiatives to maximise revenue and profitability.
• Develop and execute promotional activities, seasonal menus and special events.
• Ensure compliance with Responsible Service of Alcohol, food safety, health and safety standards and Marriott brand policies.
• Handle guest feedback and service recovery professionally.
• Prepare rosters, control labour costs and oversee daily administrative tasks.

Required profile

• Proven experience as a Bar Manager or similar senior bar leadership role.
• Passion for cocktail mixology, spirits, wines and emerging beverage trends.
• Strong commercial acumen and ability to drive profitability.
• Hands‑on leadership style with a focus on delivering luxury service standards.
• Excellent communication and guest‑focused mindset.
