Assistant Restaurant Manager - The Butler, Potts Point

About the role

The Butler is a contemporary Mexican restaurant in the heart of Potts Point, Sydney, with a sun-drenched terrace overlooking the city skyline. Applejack Hospitality is looking for an Assistant Restaurant Manager to lead, inspire and elevate service, bringing people skills, hospitality expertise and a passion for the restaurant.

Key responsibilities

• Lead, inspire and roster front-of-house teams to deliver outstanding guest experiences across every service
• Own the floor, from section allocations and reservations to waitlists and keeping service running smoothly
• Coach and develop the team in Applejack's service style, including sequence of service, table touches, upselling and turning guest moments around
• Manage labour against budget and use P&L and service KPIs to drive performance
• Champion responsible service and safety, including RSA/RSF, incident reporting and venue protocols
• Own opening and closing procedures, cash-ups, POS and end-of-day processes

Required profile

• Minimum 2-3 years of recent leadership experience in a premium or high-volume restaurant or bar
• Current NSW RSA (or ability to obtain it before starting)
• Availability to work a rotating roster including nights, weekends and public holidays

Required skills

• Working knowledge of labour planning, budgets, stock and POS systems
• Strong wine/spirits and food knowledge with confident, guest-facing communication
