Assistant General Manager - Brand New CBD Venue

About the role

Applejack Hospitality is launching a brand-new venue in the Sydney CBD and is looking for an Assistant General Manager to help bring it to life. Starting early means the chance to shape the team, build the culture and set the standard from day one. The role focuses on premium service and bringing people together.

Key responsibilities

• Lead, coach and roster front-of-house teams to deliver exceptional guest experiences across all services
• Oversee floor operations, section allocations, reservations and waitlist management
• Drive, coach and develop team members in sequence-of-service, table-touches, upselling and guest recovery protocols
• Manage labour against budgets; interpret daily and weekly P&L and service KPIs
• Maintain compliance with RSA/RSF, incident reporting and safety protocols
• Ensure cash-up, POS and end-of-day procedures are accurate and compliant

Required profile

• Minimum 2-3 years of recent leadership experience in a premium or high-volume restaurant or bar
• Current NSW RSA (or ability to obtain it before starting)
• Availability to work a rotating roster including nights, weekends and public holidays

Required skills

• Working knowledge of labour planning, budgets, stock and POS systems
• Strong wine/spirits and food knowledge with confident, guest-facing communication
