Restaurant Manager – Evening Shift

About the role

This hands‑on evening leadership position is based at LiTo, the vibrant restaurant within Mondrian Gold Coast. You will own the floor during the busiest part of the day, ensuring a seamless guest experience and supporting the overall restaurant operation.

Key responsibilities

• Lead evening service from the front, setting the tone, managing pace and ensuring guest satisfaction.
• Support and deputise for the Restaurant Manager on evening shifts, taking full ownership of floor operations.
• Develop and coach a diverse team, fostering a culture of hospitality, learning and growth.
• Drive revenue through upselling, effective financial controls and performance monitoring.

Required profile

• Proven senior floor‑leadership experience in a high‑volume, quality‑driven restaurant or bar.
• Strong evening and late‑night hospitality background with the ability to manage competing priorities under pressure.
• Availability to work evenings, weekends and public holidays.
• Current Queensland RSA and RMLV certification (or willingness to obtain).
