About the role

As the Restaurant & Bar Manager you will lead the day‑to‑day operations of Pastore, a modern Italian restaurant, and Altus Rooftop Bar & Lounge within Hotel Chadstone Melbourne MGallery. This is a senior hospitality position focused on delivering luxury guest experiences and driving operational excellence.

Key responsibilities

• Oversee daily operations of both Pastore and Altus Rooftop, ensuring consistent luxury standards.
• Deliver refined, personalised guest experiences across all food‑and‑beverage touchpoints.
• Collaborate with Kitchen, Sales & Marketing, Front Office and executive teams to ensure seamless service delivery.
• Maintain exceptional presentation, service standards and operational consistency.
• Foster a solutions‑focused culture, encouraging initiative and a "yes" mindset.
• Lead, coach and recognise team members, building a strong, engaged workforce.
• Mentor Assistant Managers, Supervisors and high‑potential staff to develop future leaders.
• Manage service recovery situations to turn challenges into memorable outcomes.
• Support recruitment, rostering, labour management and drive productivity.
• Identify opportunities to elevate the guest experience and introduce innovative practices.
• Stay informed on luxury hospitality, food‑and‑beverage and service trends.
• Maintain a strong operational presence during evenings, weekends and peak periods.

Required profile

• Proven leadership experience managing premium, multi‑outlet food‑and‑beverage operations, preferably in a luxury hotel.
• Passion for luxury hospitality, exceptional dining experiences and genuine guest connection.
• Strong leadership capabilities with a focus on team development and engagement.
