Full-Time Sous Chef

About the role

Pegasus Leisure Group is looking for an experienced, motivated full-time Sous Chef to join the team at The Cumberland in Pascoe Vale, a neighbourhood pub built around the idea of a place where locals can gather and feel at home. The venue is evolving with new dining experiences and refreshed spaces. As Sous Chef you will work closely with the Head Chef to run the kitchen, deliver consistent high-quality food, maintain safety and compliance standards and create great guest experiences.

Key responsibilities

• Work with the Head Chef to keep the kitchen running smoothly and service on point
• Prepare and plate quality dishes that keep guests coming back
• Lead and motivate the kitchen team and help build a positive, supportive kitchen culture
• Keep food safety, cleanliness and kitchen standards at the highest level
• Help manage stock, ordering and supplier relationships to keep the kitchen well stocked and minimise waste
• Monitor food and labour costs and contribute to budget and profitability targets
• Support the recruitment, training and development of team members

Required profile

• At least 3 years' experience in a professional kitchen, including leading or supporting a busy service
• Certificate III in Commercial Cookery (or an equivalent qualification)
• Current Food Safely and Food Allergens certificate, or willingness to obtain one
• Ability to stay calm under pressure and keep service running smoothly

Required skills

• Confidence across a variety of cooking techniques
• Strong understanding of food safety, hygiene and kitchen compliance
• Great organisation, attention to detail and strong communication skills
