Commis Chef - Stoney's Club

About the role

Pegasus Leisure Group, the hospitality arm of the Melbourne Racing Club, is looking for an experienced and motivated permanent Commis Chef for its Stoney's Club in Bacchus Marsh, Victoria. The kitchen is described as hands-on, fast-paced and never boring, working alongside a supportive team from prep to pass.

Key responsibilities

• Cook and prepare menu items to high-quality standards
• Support senior chefs with prep, plating and service when things get busy
• Keep food safety and hygiene standards at all times
• Run your section during service and keep things moving on the pass
• Keep your station clean, organised and ready for the next wave of tickets

Required profile

• Cert III or IV in Commercial Cookery, or equivalent real-world experience
• Food Allergens and Do Food Safely certificate
• Experience in a busy pub, bistro or high-volume kitchen
• Solid understanding of basic cooking methods and how to execute a recipe properly
• Willingness to work a rotating roster including nights, weekends and public holidays
