Commis Chef

About the role

As a Commis Chef at Mantra South Bank in Brisbane, you will join a dynamic hotel kitchen team, learning directly from senior chefs while contributing to the preparation and presentation of Mediterranean‑inspired dishes. This entry‑level position offers hands‑on experience in a vibrant hospitality environment.

Key responsibilities

• Prepare and plate food items in line with the property’s quality and presentation standards.
• Maintain timely service by ensuring dishes are ready within designated timeframes.
• Adhere to local health, safety and HACCP regulations throughout all kitchen activities.
• Assist senior chefs with cooking, mise‑en‑place and kitchen organization.
• Perform a range of kitchen duties, from dishwashing to basic food preparation.
• Participate in ongoing training and skill development sessions.

Required profile

• Recognised culinary training or commercial cookery certification.
• Previous experience in a commercial kitchen is desirable.
• Strong passion for food, creativity and willingness to receive feedback.
• Ability to work in a fast‑paced team environment.
• Flexible availability for mornings, evenings, weekends and public holidays.

Required skills

• Commercial cookery certification.
• Safe food handling or food safety supervisor certificate.
• Knowledge of HACCP principles and implementation.
