Sous Chef - Latin-Inspired Bar

About the role

Pachamama, a Latin-inspired open-air bar at the Crystalbrook Bailey hotel in Cairns, is looking for a Sous Chef. Working closely with the Chef de Cuisine and Executive Chef, you will lead daily kitchen preparation and service, keeping standards of flavour, presentation and quality high. The position is full-time and permanent.

Key responsibilities

• Lead daily kitchen preparation and service, giving clear direction and practical coaching to chefs
• Contribute ideas to menu development and explore ingredients and techniques that fit Pachamama's character
• Collaborate with the Food & Beverage team to deliver memorable dining experiences
• Oversee ordering, stock control and food costs
• Maintain food safety and hygiene standards and support responsible use of ingredients and waste reduction

Required profile

• Sous Chef experience, or an established Junior Sous Chef ready to progress
• Strong culinary background in a quality hotel or restaurant environment
• Interest in Latin-inspired flavours and shared dining
• Ability to coordinate kitchen operations and maintain standards under pressure
• Experience coaching chefs and building a supportive team
• Certificate III or IV in Commercial Cookery, or equivalent
• Availability to work a rotating roster including evenings, weekends and public holidays
