Restaurant Manager – The Dining Room

About the role

The Dining Room at Lancemore Lindenderry Red Hill is seeking a passionate Restaurant Manager to lead the front‑of‑house team and become the face of its refined yet relaxed regional dining experience.

Key responsibilities

• Lead daily operations, ensuring seamless and elevated service.
• Greet and engage guests with warmth, professionalism, and genuine hospitality.
• Manage, train and motivate the front‑of‑house team to deliver consistent, high‑quality service.
• Collaborate with the Head Chef on service timing, menu knowledge and seasonal offerings.
• Drive a strong wine service culture, including pairing recommendations and promoting the local wine program.
• Maintain high standards of cleanliness, presentation and service etiquette.
• Manage reservations and guest communications for a smooth dining experience.
• Uphold compliance with liquor licensing, RSA and food safety standards.

Required profile

• Experience in a similar leadership role within fine dining or a high‑end regional venue, or an outstanding senior host/maître d’ ready to step up.
• Strong knowledge of premium Australian wines, especially those of the Mornington Peninsula.
• Elegant, personal service style – never stuffy or scripted.
• Exceptional communication and leadership skills, especially under pressure.
• Genuine enthusiasm for seasonal, local produce and collaborative food‑and‑beverage approach.
• Highly organised with a sharp eye for detail and guest experience.
• RSA certificate (essential).
