Restaurant Manager - New Restaurant Opening, Tasmania East Coast

About the role

A new restaurant is opening on a historic coastal sheep farm on Tasmania's East Coast, celebrating local produce, wine and stories. The employer is looking for an experienced Restaurant Manager to join at the start and shape the restaurant's identity, service philosophy and guest experience. Working closely with the Head Chef, the manager leads the front-of-house operation and helps connect the kitchen, beverage program and dining room.

Key responsibilities

• Lead daily restaurant operations and service standards
• Recruit, train and develop a high-performing front-of-house team
• Create warm, memorable and personalised guest experiences
• Develop and maintain an all-Tasmanian wine program
• Collaborate with the Head Chef on food, wine and service integration
• Manage reservations, staffing, scheduling and operational performance
• Drive a culture of hospitality, professionalism and continuous improvement

Required profile

• Hospitality professional with strong leadership and a passion for exceptional service
• Ideally at least 2 years in a Restaurant Manager or senior leadership position
• Experience in hatted, highly regarded or quality-driven dining environments
• Experience building, mentoring and developing hospitality teams
• Commercial awareness and operational leadership capability

Required skills

• Advanced wine knowledge; WSET qualifications highly regarded
• Strong appreciation of Tasmanian wine and local producers
• Understanding of service delivery, wine pairing and guest engagement
