Head Chef

About the role

NRMA Murramarang Beachfront Holiday Resort, part of NRMA Parks & Resorts, is looking for an experienced Head Chef to lead its busy kitchen. The resort sits on the South Coast of NSW near Batemans Bay, with camp and caravan sites, villas, glamping tents, pools and on-site dining. The chef oversees the Bistro, Skippy's Takeaway and the events and conference centre, working closely with the Resort Manager, Food & Beverage Manager and Group Food & Beverage Manager. Staff accommodation is available.

Key responsibilities

• Lead and inspire the kitchen team with a hands-on approach
• Oversee kitchen operations across the Bistro, takeaway, events and conference facilities
• Prepare food for events, weddings, conferences and group bookings to company standards
• Manage rosters, monitor food costs, waste, portion control and menu performance against budget and KPI targets
• Order food products and partner with the Group Food & Beverage Manager on menu development, supplier management and food governance
• Create menus for functions, events and weddings using quality local, seasonal produce
• Work with restaurant and food service teams, and keep the kitchen safe, clean and hygienic
• Complete daily temperature checks, food storage procedures and compliance records
• Mentor and develop team members

Required profile

• Formal qualification in Commercial Cookery
• Proven experience as Head Chef, Executive Chef or Senior Sous Chef in a resort, hotel, club, restaurant or hospitality venue
• Experience delivering food service for events, weddings, conferences and group functions
• Current Food Safety Supervisor certification
• Experience managing food costs, stock control, ordering and kitchen budgets
• Strong leadership, planning, organisational and communication skills
• Willingness to join the team as soon as possible
