Chef De Partie – Breakfast Kitchen

About the role

Join the Sofitel Sydney Wentworth breakfast team and manage an assigned section of the kitchen, delivering five‑star quality and presentation standards in a luxury hotel environment.

Key responsibilities

• Set up, prepare and run an assigned section of the breakfast kitchen, ensuring consistent quality and presentation.
• Prepare and replenish hot and cold buffet items, à la carte dishes and in‑room dining breakfast orders promptly.
• Complete mise en place accurately and efficiently ahead of each service.
• Maintain strict food safety, HACCP and hygiene standards across all preparation and service areas.
• Monitor stock levels, minimise wastage and communicate ordering requirements to the Sous Chef.
• Support training and development of Commis Chefs and Kitchen Hands within the section.
• Collaborate with wider kitchen and front‑of‑house teams to ensure a seamless breakfast service.

Required profile

• Trade qualification in Commercial Cookery (Certificate III or IV) or equivalent experience.
• Previous experience as a Chef de Partie or strong Demi Chef ready to step up, ideally in a hotel, luxury or high‑volume breakfast environment.
• Sound knowledge of food safety and HACCP requirements.
• Strong organisational skills and ability to manage a section during busy periods.
• Flexibility to work early mornings, weekends and public holidays.
• Positive, team‑oriented attitude with pride in maintaining high kitchen standards.
