General Manager - Mott 32 Melbourne

About the role

Crown Resorts is recruiting a General Manager to lead the Australian debut of Mott 32, a luxury Chinese dining brand, at Crown Melbourne. Opening in 2027, the venue will combine internationally celebrated Chinese cuisine, exceptional design and world-class hospitality. The GM launches and leads the venue, working closely with Crown leadership and Mott 32's global management team.

Key responsibilities

• Lead the pre-opening, launch and ongoing operation of Mott 32 Melbourne
• Establish a culture of service excellence, accountability and continuous improvement
• Deliver guest experiences that reflect the global standards of the Mott 32 brand
• Drive commercial performance through strategic planning, financial management and operational excellence
• Work closely with culinary leadership to align front-of-house and back-of-house operations
• Build relationships with guests, key stakeholders, VIP patrons and industry partners
• Maintain quality, presentation, service and compliance standards
• Act as a visible, influential leader who develops high-performing teams

Required profile

• Proven hospitality leader with a track record in luxury restaurants, internationally renowned dining brands or premium hospitality environments
• Experience in a General Manager, Venue Director, Director of Restaurants or similar senior leadership role
• Experience leading luxury, fine dining, Michelin-starred, premium hotel or internationally recognised restaurant operations
• Success managing large, diverse teams and building a high-performance culture
• Ability to perform in a fast-paced, high-profile environment
• Pre-opening hospitality experience is highly regarded
