Demi Chef de Partie – Luxury Hotel Kitchen

About the role

At The Ritz‑Carlton, Melbourne, we craft culinary experiences with precision, creativity and genuine care. We are seeking a passionate Demi Chef de Partie to join our culinary team on a full‑time basis, delivering exceptional dining experiences across two dynamic outlets.

Key responsibilities

• Prepare and produce high‑quality dishes in line with established recipes, standards and luxury service expectations.
• Support the day‑to‑day operation of both outlets, maintaining exceptional culinary and service standards.
• Ensure compliance with Food & Beverage policies, food safety regulations and Marriott International brand standards.
• Maintain correct food handling, storage and stock rotation procedures.
• Demonstrate a strong understanding of quality ingredients, flavours and contemporary presentation techniques.
• Assist in managing food preparation, mise en place and service requirements to meet business demands.

Required profile

• Genuine passion for hospitality and the culinary arts.
• Strong technical cooking skills with experience across à la carte and high‑volume service environments.
• Certificate III in Commercial Cookery (or equivalent).
• Previous experience within luxury hotels, premium restaurants or high‑end food and beverage venues.
• Self‑motivated team player with excellent communication skills.
