Bar Manager – Luxury Cocktail Bar

About the role

We are looking for an experienced Bar Manager to lead Mary Mary, the award‑winning cocktail bar located within The Tasman, a Luxury Collection Hotel in Hobart. The role combines hands‑on service with strategic oversight to ensure world‑class guest experiences and commercial success.

Key responsibilities

• Oversee daily bar operations, ensuring seamless service and high guest satisfaction.
• Coach, mentor and develop the bar team through training, performance reviews and succession planning.
• Design, execute and continuously evolve the cocktail program in partnership with Food & Beverage leadership.
• Manage beverage cost, inventory, ordering, supplier relationships and waste to meet financial targets.
• Analyse sales data, drive revenue initiatives and create promotional and seasonal beverage menus.
• Ensure compliance with Responsible Service of Alcohol, food safety, health & safety and brand standards.
• Handle guest feedback and service recovery promptly and professionally.
• Prepare rosters, control labour costs and manage administrative duties.

Required profile

• Proven experience managing a high‑end cocktail bar or similar hospitality venue.
• Strong commercial acumen with a track record of achieving cost and revenue targets.
• Excellent leadership and people‑development skills.
• Passion for mixology, spirits, wines and emerging beverage trends.
• Ability to work hands‑on on the floor while maintaining strategic oversight.

Required skills

• In‑depth knowledge of cocktail creation, spirits, wines and beers.
• Experience with inventory management and cost control.
• Familiarity with Responsible Service of Alcohol legislation.
