Purchasing Manager

About the role

Marriott International is seeking an experienced and highly skilled Purchasing Manager to join the Finance / Purchasing team at its JW Marriott property in Surfers Paradise. The role oversees all purchasing activities, ensuring compliance with established procedures for ordering, receiving, storing, distributing, and payment of items across the hotel.

Key responsibilities

• Develop and maintain an approved vendor list covering all categories.
• Assist the Executive Chef with food, beverage, and controllable purchases to meet quality and profitability targets.
• Order food and beverage supplies based on business needs and manage budgeted costs.
• Enforce first‑in/first‑out inventory rotation and maintain sanitation and safety standards per brand guidelines.
• Coordinate delivery timing with kitchen, restaurant management, and vendors to support production schedules.
• Verify invoices against shipments for quantity, quality, weight, and specifications.
• Utilise computer programs for daily and period‑end food and beverage cost reporting.
• Maintain accurate inventory controls, including levels, dating, rotation, and requisitions.

Required profile

• Proven experience in hotel or hospitality purchasing, preferably in food and beverage.
• Strong knowledge of inventory control, vendor management, and budgeting.
• Ability to work closely with culinary teams and enforce brand sanitation standards.
• Detail‑oriented with excellent analytical and reporting skills.
